Ham Upside Down Corn Bread

 
 

 

 
 

1 thick slice ham
1 1/2 cups flour
3 1/2 teaspoon B.P. [baking powder]
3 tablespoons sugar
1 teaspoon salt
3/4 cup cornmeal
1/3 cup melted butter
1 cup milk
1 egg beaten.

have ham slice cut 1/2 to 3/4 inch thick

cut ham in wedge shape pieces and brown on both sides in hot skillet

sift flour, B.P. sugar, salt together

add the corn meal

combine eggs, milk & melted shortening

add to dry ingredients

and pour over browned ham wedges

bake in moderate hot oven (400°) untill ham & corn bread are done about 30 minutes.

Serve while very hot with spicy tomatoes sauce.
